I am not sure when I last sat down and ate lunch with a fork. Thank goodness for yummy green smoothies; if it weren’t for my Vitamix I’d probably be eating trail mix all day. This one has been my go-to lately. It is just sweet enough, alkalizing, hydrating and the ginger gives me little jolt. Enjoy!
| Bare Beauty’s Go-To Green Smoothie | (serves 1)
- 8 oz coconut water
- juice of 1/2 lemon
- large handful of baby spinach or kale
- 1 apple, sliced (I like gala, pink lady, fuji, or honeycrisp apples)
- 1 or 2 celery stalks, roughly chopped
- 1-inch cube of ginger root, peeled
- 1 tablespoon chia seeds
- small handful of ice cubes
Blend all ingredients together until smooth and drink immediately.
