Gwyneth Paltrow is the recipient of a lot criticism. I personally love her, and would do almost anything she told me to do. This cookbook provides so many delicious recipes that adhere to the way I strive to eat 90% of the time: no gluten or dairy. She also eschews shellfish, red meat, eggs, soy, sugar, alcohol, etc, etc. (I only do all of that after the holidays, let’s be honest.)
My sweet in-laws recently gave me a Vitamix and I have been experimenting with one of Gwyneth’s green smoothies almost every day. Here is the recipe for my very favorite:
CUCUMBER, BASIL + LIME JUICE
1/2 Cup Basil Leaves (or mint)
1 English Cucumber, peeled and sliced
1 Lime, juiced
1 Apple, cored and sliced
A splash of water or an ice cube
Put the ingredients into the Vitamix (in order of the list above) and blend into a smoothie. Done!
This smoothie tastes like a mojito, but better. It is truly addictive. You can also use a juicer instead of the Vitamix. Bon Appetit!
