I picked up this salad recipe a few years ago, care of Amansala Bikini Bootcamp, via Coastal Living magazine. I think once my future child is six months old, I may pay them a visit and get the salad from the source! Anyway, this recipe is easy, refreshing, delicious, and you guessed, it, really healthy.
Serves 2.
Salad:
- 2 cups shredded cabbage
- 2 cups romaine, chopped
- 1 cup shredded carrots
- 1 cup diced tomatoes
- 1 avocado, cubed
- (2) 6 oz chicken breasts or fish filets
- 2 tablespoons toasted sesame seeds
Toss all ingredients together in large bowl and divide into 2 bowls. Top with toasted sesame seeds. Top with dressing.
Dressing:
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons low sodium, gluten-free soy sauce
- 2 garlic cloves
- 2 tablespoons raw honey
- 2 tablespoons ginger, peeled & minced
- 1 teaspoon sesame oil
- 2 tablespoons water
Combine all ingredients and puree in blender.
