This smoothie is delicious and makes you feel so good. Kale packs a more nutrient-dense punch when raw, and I don’t always have time to make an interesting salad, so I am trying to incorporate it into my smoothies these days. By the way, we aren’t eating enough kiwis!
Did you know that kiwis:
- have protein dissolving enzymes that aid in digestion?
- help regulate blood pressure with their high potassium?
- are high in antioxidants?
- boost your immune system with their high levels of vitamin C?
- flush toxins out of the body through the GI tract with their fuzzy skin?
- prevent macular degeneration with their high levels of lutein and zeaxanthin?
- promote healthy skin with high levels of vitamin E?
Kiwi Kale Smoothie
Serves 1.
- 1 cup coconut water
- 2 kiwis, peeled
- 3-4 leaves of kale, roughly chopped, stalks removed
- 1 teaspoon grated/chopped ginger
- 2 ice cubes
Blend all ingredients together in a powerful blender or Vitamix until smooth. Serve immediately.
