Good For You Friday: Peach Smoothie

It’s peach season, folks.   Peaches are, hands-down, my favorite fruit to eat fresh and ripe.  In fact, in high season I buy them up and eat one almost every day.  Sadly, it seems that one day they are too hard to eat and two days later they are moldy mush.  What to do when you know you won’t get to your peach before its “expiration date”?  Cut it up and freeze it, of course.  Which brings me to a very simple and delicious smoothie recipe.

Peach Smoothie

Serves 1.

  • 1 cup unsweetened coconut milk
  • 1 peach, sliced and frozen, or 1 cup frozen peaches – the skin can be left on
  • 1/2 lime, juiced – it sounds unnecessary, but don’t skip the lime juice, it really brings out the flavor
  • 1 scoop protein powder, this one is my favorite.
  • Raw honey or stevia extract, to taste

Blend all ingredients in a powerful blender or Vitamix.  Serve immediately.  Enjoy!
