It has (temporarily, I am sure) finally warmed up here in Charleston and I am enjoying every minute of it. It seems like we haven’t seen the sun for months… While I drink green smoothies all year, I really love them once the weather warms up. It is such an easy, fast and delicious way to give your body a few servings of veggies and loads of nutrients. This smoothie has a great kick from the ginger, which aids digestion and detoxification. It is not super-sweet, so green smoothie novices may want to add a few pineapple chunks. Also, the recipe yields almost 3 cups, so you can share with a friend or call it lunch, or a large snack…….. 😉
Green Ginger Smoothie
- 1 cup coconut water
- 1 cup baby spinach or baby kale
- 1 honeycrisp (or other sweet) apple, roughly sliced. Never Peel an apple.
- 1 celery stalk, roughly chopped
- 1 1-inch piece of ginger, peeled and roughly chopped
- 1 handful flat-leaf parsley leaves
- 1 handful ice cubes
Add all ingredients to a powerful blender or Vitamix and blend until smooth. Serve immediately.
