Good For You Friday: Pumpkin Pie Smoothie


Skin-regenerative pumpkin is a great addition to a fall smoothie and almond butter adds a dose of healthy fats.  Spinach and blueberries add fiber, antioxidants and vitamins.  This smoothie is so delicious and makes a great lunch; it keeps me full all afternoon.

Pumpkin Pie Smoothie:

  • 1/2 cup pumpkin (wither fresh or canned)
  • 1 tablespoon raw almond butter
  • 1 cup baby spinach
  • 1/2 cup blueberries, frozen
  • 1/2 banana, frozen
  • 1 teaspoon good quality maple syrup or raw honey
  • cinnamon and nutmeg to taste
  • water, as needed

Add all ingredients to a powerful blender or a Vitamix and blend, adding water as needed.
