I am usually trying to get something green into every smoothie I make, but this one is unapologetically red. And good for you. And delicious. Goji berries have gotten a lot of positive press lately, but I wanted to make sure that they acutally deserved all the hype. This is what I’ve uncovered: Goji berries have been used in Chinese herbal medicine for thousands of years. They are still mostly grown in sub-tropical region in China. These berries are very nutrient-dense; they are full of antioxidants and amino acids, they are anti-inflammatory, and contain more protein per ounce than any other fruit. Please note: they are in the nightshades family, so if you are allergic, beware.
Super Berry Smoothie:
- 1 cup unsweetened coconut milk
- 1 scoop vegan protein powder. (This one is my favorite)
- 1/4 cup frozen raspberries
- 3 frozen strawberries
- 1 heaping tablespoon dried goji berries, soaked overnight
- 1 tablespoon organic, raw, unrefined, cold-pressed virgin coconut oil
Blend all ingredients in a powerful blender or Vitamix. Enjoy!
