Fall is in the air and this smoothie tastes just like Thanksgiving. Sweet potatoes are high in fiber, beta-carotene and complex carbohydrates and are known to regulate blood sugar and improve digestion. Fennel is also good for digestive health and detoxification, while chia seeds are high in omega-2 fatty acids. This smoothie has a dessert’s texture and taste, but it’s completely guilt-free!
Sweet Potato and Fennel Smoothie:
- 1 cup coconut water
- 1/2 sweet potato, roasted; I roast them the night before and refrigerate them
- 2 cups baby spinach
- 1 orange, peeled
- 1/2 fennel bulb
- 2 dates, pitted
- 1 tablespoon chia seeds
- cinnamon, cloves and nutmeg to taste
Add all ingredients in a powerful blender or Vitamix. Blend until smooth. Enjoy!
